Rice Salad with Artichoke Hearts

Ingredients:

  • 200 g of rice
  • 2 tbsp of olive oil
  • 1 jar of MAYSSEN artichoke hearts
  • 1 mango
  • 1 tbsp of lemon juice
  • A pinch of dried coriander
  • Salt and pepper

Preparation:

  1. Cook the rice as usual, then set aside.
  2. In a bowl, mix the olive oil, lemon juice, and dried coriander. Season with salt and pepper.
  3. Cut the MAYSSEN artichoke hearts into pieces.
  4. Dice the mango into small cubes.
  5. In a salad bowl, combine the rice, artichoke hearts, and mango cubes.
  6. Dress the salad with the vinaigrette and serve chilled.
